Pink Lemonade

Makes 4 cups

Ingredients

4 cups of water

2 tbsp of lemon juice (around 3-4 lemons)

2 tsp of stevia

2 cups of ice

1 lemon sliced thinly

1/4 cup of dried cranberries

3/4 cups of berries (strawberries, blackberries, blue berries or raspberries)

Procedure

1. Mix together the water and the stevia until the stevia has dissolved

2. Add the lemon juice and mix.

3. Add the berries and let the lemonade sit for 10 minutes, so the pink color can sip in.

4. When ready to serve put the lemonade in a jar with the ice and the lemon slices. To each glass add a tsp of the cranberries and then the lemonade. 

 

Guilt free Hot Chocolate

For 1

Ingredients

2 tbsp of cocoa powder

2 cups of milk (skim or low fat, can also be done with almond milk or cashew milk to give it a Nutella flavor and make it vegan)

2 tsp of stevia

1/2 tsp of vanilla extract

Procedure

1. Bring the milk up to simmer. 

2. Add the cocoa powder and the stevia and whisk for 3 minutes to create some foam.

3. Add the vanilla extract and whisk for one more minute

4. Serve and sprinkle on top some extra cocoa powder or cinnamon

 

Horchata

Makes 4 cups

Ingredients

1 cup of rice

4 cups of water

1/2 cup of milk (whole or skim milk. Also it can be rice, almond or cashew milk to make it vegan)

1 tsp of vanilla extract

1 tsp of stevia

1 tsp of cinnamon

1 pinch of salt 

1/8 tsp of nut meg

•Optional: cinnamon sticks (4)

Procedure

1. In a blender add the water with the rice and blend for one minute. Let it sit for at least 4 hours.

2. With a clean cheese cloth strain the water and rice.

3. Get the liquid and add the milk, the stevia, the nut meg, the salt and the cinnamon; mix thoroughly

4. Serve with ice and a a cinnamon stick.
